Spicy Shakshuka with Feta
A spicy hearty breakfast or dinner dish that smells incredible!
Ingredients
- 1 can petit diced tomatoes-with juices 28 oz can
- 1 can crushed tomatoes
- 1 each diced onion
- 1 tbsp minced garlic
- 8 oz beef or pork chorizo
- 6 oz crumbled feta
- 6 each eggs
- fresh parsley for serving
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp chili powder
- salt and pepper to taste
- 6 pieces Naan for serving
Instructions
- In a large pan, cook chorizo until soft
- Sautee onions in the same pan with leftover chorizo oil until translucent
- Add garlic and sauté 1 minute until fragrant
- Pour in tomatoes with all juices and stir to combine-let simmer for 10 min
- Crack 6 eggs into tomato mixture and let cook to desired egg softness (5-8 minutes depending on heat of mixture)
- Top with crumbled feta and fresh cut parsely
- Serve with warm naan
