I love the colors of fresh produce! Nothing says summer like bright, fresh fruits and veggies to make delicious food. I made this easy dinner on a night where I had lots of produce to use up and didn’t have a lot of time to cook.
For this simple dinner, I started with 5 bell peppers, tomatoes, kielbasa, potatoes, green onions, and a few peppers for a little kick. Just dice everything up into medium sized pieces and saute the peppers/tomatoes while the potatoes cook.
I boil the potatoes rather than saute them so they get nice and soft. You don’t want them to be too soft though, otherwise you’ll end up with mashed potatoes rather than potato chunks.
Once the peppers are soft, I fried up the kielbasa in the same pan to get some of the vegetable flavor mixed in with the meat. Since the kielbasa is already fully cooked, the frying is just to add some flavor and heat the meat to the same temperature as the veggis.
Once the potatoes are soft, add them in a large mixing bowl to the kielbasa and pepper mix. I season everything with half a packet of ranch dressing seasoning, salt/pepper, and a little balsamic vinegar to taste.
Serve this delicious, easy dinner some crusty bread and olive oil/balsamic vinegar to dip with. The whole process took less than 30 minutes and turned out wonderfully. Enjoy!
