Meatloaf is one of those comfort foods that I crave every so often, especially when its rainy out. I have to brag a little and say I converted my husband to liking meatloaf when we were dating when I made him my recipe. He had never liked it before I made it for him, and now he requests is fairly frequently. Meatloaf is simple to make and freezes well so feel free to double this recipe.

Ingredients
- 2 lbs of ground beef (10% fat or less)
- 1 onion, finely chopped
- 2 tbsp ketchup
- 1 tbsp mustard
- 2 tbsp Worcestershire sauce
- 1 egg
- 3/4 sleeve Ritz crackers
- 2 tbsp mixture of oatmeal and brown sugar
- salt/pepper to taste

This is my SECRET ingredient-Ritz Crackers! I’ve seen other recipes use oatmeal or saltine crackers, but Ritz crackers are SO MUCH better. Their buttery taste adds so much flavor to the meatloaf. Crush them in a sandwich bag until very fine.

Mix all ingredients together in a large mixing bowl until will combined.


Put meat mixture in oven safe pan that is pre-sprayed with oil. Cover with foil.

Sprinkle the oatmeal/brown sugar mixture on top of the meatloaf.

Bake meatloaf at 375 degrees for 45-50 minutes then take the tin foil off and bake for an additional 10 minutes. You can even turn on the broiler for a few minutes to crisp up the top.



I’ll be honest, this recipe doesn’t make the most perfect, beautiful looking meatloaf, but it sure does taste amazing. It fall apart a little when you serve it, but mixed with some mashed potatoes and green beans, it makes for a delicious comfort meal. Enjoy!
