Happy start to a long holiday weekend! I love this time of year when the days are longer and everyone just seems to be in a good mood celebrating together. If you are hosting company this weekend, no doubt you have some cookouts planned so I wanted to share my semi-famous Loaded Potato Salad recipe to pair with your hot dogs and hamburger spread.
This is a recipe I have refined a bit over the years, but I think I finally have it in final form. It was born out of a lack of good potato salad recipes that were both creamy (without using too much mayo) AND flavorful that didn’t just taste like mushy potatoes. By adding lots of ingredients like bacon (can’t go wrong there), onions, and my secret ingredient (mashed potatoes!), this recipe delivers a chunky, creamy, flavor packed side dish that is sure to be a hit.
I call it loaded potato salad because there really are a LOT of ingredients, but they all add so much flavor and texture. You can add or subtract ingredients based on preferences, but I really think the combination of all the flavors is really good. Just make sure not to overcook the cubed potatoes so they don’t get too mushy, otherwise you’ll have just lots of mashed potatoes.

Loaded Potato Salad
Ingredients
- 1 package Instant Mashed Potatoes
- 5 lbs white potatoes
- 1/4 cup chopped chives
- 3 each hard boiled eggs
- 1 package bacon
- 1/2 whole diced red onion
- 1/2 cup chopped green onion
- 2 cups mayo
- 3 tbsp yellow mustard
Instructions
Potatoes
- Bring a large pot of water to a boil.
- Cut the potatoes into cubes and add to boiling water-boil until fork tender (approx 15 min)
- While potatoes are boiling prepare mix in ingredients
Mix In Ingredients
- Preheat oven to 400F degrees-put bacon on metal baking rack
- Cook bacon in the oven for 20 min or until very crispy
- Roughly chop bacon once cooled
- Chop green onions
- Dice red onion
- Roughly chop hard boiled eggs
- Make package of instant mashed potatoes according to package instructions
Assembly
- Drain boiled potatoes and add to large mixing bowl
- Add in 2/3's of mashed potatoes-stir lightly to combine
- Add in all other dry ingredients (bacon, eggs, onions, ect)
- Add mayo and mustard-can add more or less mayo to preference
- Mix all ingredients together well-try to keep larger potato chucks intact so don't over mix
- Chill for 2-3 hours or until cold
- Serve and enjoy!
