I think whipped ricotta is new my favorite thing. It is basically food frosting. You can make it sweet and make it more of a dessert (think Lemon Ricotta Cake) or you can make it savory like I did with the recipe. When your summer garden starts over producing tomatoes, this recipe is the perfect appetizer or meal to incorporate lots of tomatoes and fresh herbs into a savory, delicious toast.
Use whatever herbs you enjoy to customize the flavor. Be sure to really whip the ricotta to make it nice and fluffy. You could really top these with any vegetable or add salami to make it more of a meal portion. This is basically blank canvas recipe so go wild! You can pair this with my summer salad recipe for a complete meal that involves no ovens or heating up your house. Always a plus when its in triple digits.
Herb Whipped Ricotta Toasts with Tomatoes
Ingredients
- t tbsp each fresh chopped herbs-rosemary, sage, basil, parsley, dill, ect.
- 16 oz Ricotta Cheese
- 2 tbsp Half and Half
- 2 slices Fresh Bread-sourdough or baguette
- 1.5 cups Freshly sliced tomatoes
- 1 tbsp Olive Oil
- 1 tbsp Pickled Onions
Instructions
- Finely chop herbs and put in stand mixer
- Add ricotta and half and half to mixer
- Whip with whisk attachment for 1 minute until fluffy
- Slice tomatoes into small pieces
- Drizzles tomatoes with olive oil and salt and pepper to taste
- Cut bread into thick slices (can toast bread if desired)
- Top Bread with approx 1/4 cup ricotta mixture-spread evenly over bread
- Top ricotta with tomatoes and pickled onions
- Garnish with more salt/pepper and fresh herbs
