I LOVE shrimp in the summertime. Shrimp cocktail, campechana, shrimp tacos, I love them all. This quick and easy summer shrimp bowl is a colorful way to incorporate shrimp in a low heat, 30 minute meal. By buying pre-cooked shrimp and making your rice in a rice cooker, you don’t have to heat up the kitchen but can still get a delicious summer meal that comes together so quickly.
If you don’t have pre-made mango pico de gallo available, you could easily make your own with some mango, tomato, onion, cilantro, and lime juice. I love to get the black beans that have jalapenos in them for this recipe since they add an extra kick to the dish.
I will like a couple different kinds of rice that you could find at Target or Walmart. You could definitely just make white rice and add in the lime juice and cilantro on their own if needed.

Summer BBQ Shrimp Bowls
Ingredients
- 8-10 whole cooked, tail on jumbo shrimp
- 1 cup cilantro lime rice
- 1/4 cup mango pico de gallo
- 1/4 cup black beans-rinsed
- 2 tbsp fresh cilantro
- 1/2 cup sweet BBQ sauce
- Optional: sour cream to drizzle
Instructions
- Toss shrimp in BBQ sauce
- Cook rice according to package instructions
- Put rice in the bottom of a dinner bowl
- Layer on shrimp, mango pico, and black beans
- Top with cilantro, lime wedge, and drizzle with sour cream.
