When the temperatures rise and we get into the longer days of summer, I love to take a break from turning on the oven to try to keep the heat under control. This means we eat lots of sandwiches, cold pastas, and fresh salads in the summertime. I created my classic summer salad as a way to incorporate all the colors and flavors of summer into one delicious and easy recipe that can be thrown together in less than 10 minutes. You can mix and match the ingredients to your preference (swap the goat cheese for feta) and it is also great meatless!

Summer Salad
A bright and flavorful salad for the hot nights of summer.
Ingredients
- 3 cups Mixed Greens of Choice
- 2 oz Shredded Chicken White or Dark Meat
- 2 tbsp Golden Raisins
- 2 tbsp Pistaschios
- 2 tbsp Red Onion Thinly Sliced
- 4-5 pieces Granny Smith Apples Thinly Sliced
- 1/2 cup Broccolini
- 2 tbsp Crumbled Goat Cheese
- 1/4 cup Mini Peppers Yellow Variety
- 1/4 cup Cherry Tomatoes Yellow Variety
- 4 tbsp Salad Dressing of Choice
Instructions
- Rinse and chop salad greens of choice (spring mix, spinach, kale, ect)
- Add chicken and vegetable toppings in any order
- Top with Granny Smith Apple pieces
- Sprinkle Goat Cheese Crumbles on last
- Drizzle on salad dressing of choice. Enjoy!
