Weekend mornings are some of my favorite times of the week. Sleeping in, enjoying a cup of French press coffee, and making a big, delicious brunch are some of our Saturday morning traditions that make each weekend special. Sometimes we are in a savory mood and make chiliqueles or breakfast tacos. Sometimes we want something sweet like pancakes or muffins. If you are looking for ideas for what to make for your next slow weekend morning, I’ve found five amazing brunch ideas for you below.
1. Blueberry Muffins
Blueberry muffins are one of my go to breakfast ideas because they are so quick and easy to make. I especially like this Duncan Hines Muffin Mix because of the streusel topping and real blueberries you add to the muffin mix. They always come out warm and fluffy and go perfectly with some fresh fruit and a cup of coffee. Just make the muffins according to the box instructions and wash your choice of fresh berries to serve alongside the muffins. You can even add fresh blueberries in addition to the ones that come with the mix for extra flavor!
2. Latkes with Smoked Salmon
I love latkes! They are such a versatile food and can be made for a savory breakfast treat by adding creme fraice and some smoked salmon for a delicious brunch spread. I use Trader Joe’s Potato Pancakes and heat them in the oven until they are crispy. Top the latkes with creme fraice or sour cream then add the smoked salmon and sprinkle fresh dill to top it off. I serve these with scrambled eggs or poached eggs for a hearty kick off of the weekend.
3. Eggs Benedict
I think if I could only eat one thing for the rest of my life it would be eggs benedict. There are so versatile and you can make them with nearly an infinite combination of ingredients. I’ve had bison benedicts, biscuit benedicts, and a crab cake benedict at Copper that is to die for. Sometimes though, you just want a classic eggs benedict to kick off the weekend. I found an easy blender hollandaise sauce recipe that takes the time and effort out of whipping egg yolks for 15 minutes and hoping they don’t scramble. You can sub in smoked salmon instead of Canadian bacon or add avocado or tomato to make it a more colorful breakfast. However you style it, eggs benedict is always a great weekend brunch idea.

4. Chilaquiles
Living in Austin, Texas, the home of the breakfast taco, it isn’t a surprise that we have found other ways to make traditional Mexican food into breakfast dishes. Chilaquiles are no exception, and they are a delicious way to start your weekend with a kick. I’ll link several chilaquiles recipes below, but you can always add toppings to the basic recipe to make it more of a breakfast dish. My favorite toppings include: cotija cheese, black beans, avocado, fried eggs, tomatoes, hot sauce, and red onion. This is a pretty heavy dish, but it is delicious and makes for a great hearty breakfast.

5. Lox and Bagel Spread
I saved the best for last! When in doubt, a lox and bagel spread with all the toppings is an easy weekend brunch idea that you can put together quickly and is a crowd pleaser. You can have all kinds of toppings, from vegetables like red onion, arugula, tomato, and cucumber to capers and a variety of different cream cheeses along with the lox. This way everyone can get what they want or make two completely different halves and mix it up. Add some fresh fruit and your set for a great start to your weekend.
